Don't miss August's Fruits and Veggies!

August is a great time of year for many reasons! One big reason is the assortment of fresh fruits and veggies that is all around us. Farmer's markets and grocery stores are brimming with this season's finest. And, if you know someone with a garden, you've undoubtedly had tomatoes or zucchini tossed in your arms as you're leaving their house.

A big question that I hear lately is, "what do I do with these fruits and veggies?". Here are some simple ideas that take minimal time and have maximum taste.

Grill it! Whether you have a grill or a grill pan, you can grill almost anything. Put a little olive oil, salt and pepper on almost anything and you're in business. Zucchini, eggplant, corn, peppers, and even peaches can be grilled. Though, you want to skip the salt and pepper on the peaches.

Salads. There are no rules for salads. You can make them with or without lettuce. You can make one with only tomatoes and basil. Or, simply look in your fridge and chop up what you see. While you're assembling your salad, hard boil an egg for some protein or grill a piece of salmon. You can put in croutons, tortilla chips or nuts for some crunch. If you have some quinoa from last night's dinner, pop it in your salad. Whatever you like, toss it in there. Salads are a perfect light and hydrating summer meal.
